Altitude's menu items are prepared with great care, using the very best and freshest products and ingredients – many of which are locally and/or organically grown. Re-texturing “ordinary” foods and making them truly extraordinary is among the culinary team’s major focus, as are using avant-garde preparation techniques resulting in yummy and unique foams, gelees, and frozen vinaigrettes. Plus fruit puree lollipops and delectable granites.
Menu offerings appeal equally to either a vegetarian or a carnivore! Item presentations are thoughtfully conceived and carefully crafted. And the Altitude bar menu showcases smaller portions of dinner items.

And as for the food, well . . . Executive Chef Paul M. Bosch remains true to basic culinary principles yet pursues out-of-the-box techniques, presentations and flavor sensations. Paul is especially passionate about and takes great pride in the restaurant’s extensive use of local Oregonian bounty. Literally taken from The Resort’s backyard are some “best you can get” produce such as mushrooms, huckleberries, stone fruits (including peaches, cherries, apples), and hazelnuts. Caught right out of the Columbia River one day and served fresh the same day or next are steelhead, coho and sturgeon. And the cows who ultimately become Altitude’s country-natural beef graze on land in nearby Sisters, OR. Yes, “locavores” will love the bounty showcased at Altitude!
