Mt. Hood Restaurants

New at The Resort at The Mountain is the culinary team’s herb garden – thanks to the request of a conference group who has frequented The Resort for several years – Family Nature Summit. This summer, the group planner inquired as to what might be offered as a kids’ activity to truly provide a hands-on experience for the group’s children – ages 6 – 12.

Chef Paul Bosch stepped up and suggested that the children design and subsequently plant an herb garden. And so, for one day during the first week of July, between two one-hour shifts of 20 – 30 total children – both the younger ones and the older ones -- that’s exactly what they did!

Chef discussed with the children the story of how the herbs would be used and taught them about “sustainability” in language they would not only understand but appreciate. In fact, a couple of the children were surprisingly savvy about the products and the process.

With planters built and herb plants purchased specifically for this activity, the kids planted an estimated 25 – 30 small herb plants including basil, cilantro, oregano, rosemary, tarragon, and thyme. They even planted some tomatoes!

The herb garden, “out back” by the pool with smart access to The Resort’s kitchen is integrated into the overall landscaping and will be ready to yield herb clippings useable in menu items throughout The Resort by mid-August.

Chef’s plan is to expand the garden and its produce … enabling Resort diners to enjoy even more fresh items than the already savory Oregon area bounty currently available.

The children were invited back next year to literally see the fruits of their labors!
